This is a pie, my step grandmother made and I loved it – it makes it's own crust.

                                             Coconut Custard Pie

2 cups milk                         1/2 cup coconut

1 tsp. vanilla                        Dash salt

1/2 cup flour                       3/4 stick margarine

1 cup sugar                          4 eggs

Blend ingredients in blender. Mix well. Pour into a 10 inch greased pie plate. Bake 50 minutes at 350 degrees.

This is another variation of Coconut Blender Pie, I found:

                                              Custard Blender Pie (makes it's own crust)

3 eggs                                                            3 TBSP. flour

1 (13 oz. can) evaporated milk                        3 TBsp. margarine

1 cup sugar                                                     Nutmeg to taste

Grease and flour pie pans. Combine all ingred.'s in blender for 30 seconds. Pour into pans. Bake at 350 degrees for 40-45 minutes or until done.

These are great pies and so easy to make, I keep a bag of coconut in the freezer just in case I get the taste for something sweet.   Seems we always have milk and eggs.

UPDATE – I FOUND HER RECIPE BELOW…SEE BELOW.

Suzanne, it didn't mention making two pies, so I assumed only one, like the recipe above, only mentioning one pie. 

These are not the recipes my grandmother used – I would have to take time to search for hers, specifically, as my recipes need sorting/condensing, bigtime.

I got these out of a cookbook. But, you are good with measurements, so if it sounds like TWO, then I would do two. LOL

I just looked in my grandmother's church cookbook and found her recipe:

                                     Blender Coconut Pie

1 (13 oz.) can evaporated milk                        3 TBsp. vegetable oil

3 eggs                                                             1 cup flaked coconut

1 cup sugar                                                      1/2 tsp. vanilla extract

 3 TBsp. flour                                                     Ground nutmeg

  Combine all ingred.'s except Nutmeg, in a blender. Pour into a buttered pie pan. Mix will be thin; sprinkle nutmeg over top. Bake at 325 degrees for 40 minutes. Let stand 10 minutes before serving. Makes its own crust.
