Cream Scones

2 cups flour

4 tsp baking powder

2 tsp sugar

1/2 tsp salt

4TBSP butter

2 eggs

1/3 c milk and water in equal parts

mix and sift flour, baking powder, sugar & salt. 

work in butter with tips of fingers

add eggs well beaten (reserve a small amountof unbeaten egg white) and cream (I think she means the milk mixture here as there was no cream in the ingredient list – unless she meant cream in the ingredient list instead of milk…)

toss on a floured board – roll to 3/4inch thickness

cut in squares – brush with egg white – sprinkle with sugar and bake in a hot oven 15 minutes

quitestorm-thanks again, probably it was one of those deals where she used cream if she had it, if not milk would do. why it had to be thinned down with water I don't know. It could also be the fact that you work the butter in differently. creaming it in. Don't know, I'll experiment.
