I have adapted this recipe to what I have in the fridge and make it different every time but it is the recipe I started making meatloaf with. I realize you don't need a recipe for meatloaf but I was finding mine dry and blah ….
Ingredients

  • Cooking spray
  • 1  cup  chopped onion
  • 6  tablespoons  ketchup, divided
  • 2  tablespoons  Dijon mustard, divided
  • 1  cup  (4 ounces) shredded part-skim mozzarella cheese ( today I used a mix of cheddar and provolone)
  • 1/2  cup  Italian-seasoned breadcrumbs (I use Panko)
  • 1/4  cup  chopped fresh parsley
  • 2  tablespoons  grated Parmesan cheese
  • 1  teaspoon  dried oregano
  • 1/4  teaspoon  black pepper
  • 1  large egg, lightly beaten
  • 1/2  pound  lean ground beef
  • 1/2  pound  lean ground pork
  • 1/2  pound  lean ground veal ( I don't eat veal so I used more pork and beef)
Preparation

Preheat oven to 375°.

Place a medium nonstick skillet coated with cooking spray over medium-high heat. Add the chopped onion, and sauté for 3 minutes. Combine the onion, 1/4 cup ketchup, 1 tablespoon mustard, mozzarella, and next 6 ingredients (mozzarella through egg) in a large bowl. Crumble ground meats over cheese mixture; stir just until blended.

Pack mixture into an 8 x 4-inch loaf pan coated with cooking spray. Combine 2 tablespoons ketchup and 1 tablespoon mustard; spread over top of loaf. Bake at 375° for 1 hour or until meat thermometer registers 160°. Let meat loaf stand in pan 10 minutes.

Remove meat loaf from pan, and cut into 12 slices.

Note: Substitute lean ground beef for the ground veal and pork, if desired.

Sounds like a very good meatloaf recipe, Shells.  It reminds me that Mom always added oatmeal to her meatloaf, and now it just doesn't taste right if it is not added.  It may be my imagination, but the oatmeal flakes seem to hold the moisture in better than any other added starch that I have tried.

I don't like oatmeal in my meatloaf, thats why I use the panko instead.  I don't like the texture the oatmeal gives.

My mother used the recipe on the back of the oatmeal box (I haven't seen that recipe in years!) but my grandmother used torn stale bread soaked in milk.  I liked both versions, but they were totally different textures. I actually liked my grandmother's version best — but you had to watch her make it because there wasn't a recipe, and she rarely made it the same way twice.

The recipe with the oatmeal seemed to make a softer version of the meatloaf, and it soaked up the juices from the meat.  That meatloaf was almost easier to serve with a spoon than to slice.  When my son got married and had meatloaf for dinner with his in-laws he was fascinated that meat loaf actually cut like meat.  I think his mother-in-law used very little besides ground meat in the meatloaf.  That and a little ketchup over the top.

Yeah, I like it when its firmer …. I find the bread crumbs gives it a mushy texture, which I also don't like.  The panko is good in it, makes it like I like it.  With the zucchini being a bit soft I wanted the contrast texture in the meatloaf … food textuers are big in my cooking.

I am incapable of making meatloaf. Truly cannot make it, am missing the meatloaf gene. My kids think this is hysterical, well unless they were being subjected to yet another meatloaf failure.

Does not matter the recipe, I have tried them all. And the types of failure differ with each attempt. My favorite is burned on the outside and mush in the middle.

Once every couple of years I will attempt it because of the stigma and shame associated with the inability to bake a mound of ground round. But then it comes out of the oven and I am shocked back into reality and humbly move away from the meatloaf.

LOL well, ground round does not a great meatloaf make :)

It's one of those things that need a bit fattier meat. Mine is a hit and I don't make it exactly the same way every time, but I use dry bread crumbs, egg, dehydrated onion, and depending on mood and  availability, steak sauce, worcestershire, some bit of tomato juice or sauce for the flavoring. Not always all. And lately I crumble in dried spinach.

The biggest thing is not overmixing it.

oatmeal in meatloaf is how we found my oatmeal allergy.  I'll never forget that!  I had never had oatmeal until I ate it in meatloaf at a friend's house as a kid.  Her poor mom just thought I didn't like the meatloaf.  But I did like it!  It didn't like me!
