My mom used to make a mayo chocolate cake all the time and I haven't found one that looked like hers…….I think this may be it!
Duke's Chocolate Cake
Cake:
- 6 Tbsp. cocoa
- 3 cups all purpose flour
- 1 Tbsp. baking soda
- 1/4 tsp. salt
- 1 1/2 cups sugar
- 1 1/2 cups Duke's Mayonnaise, or any brand
- 1 1/2 tsp. Vanilla Extract
- 1 1/2 cups cold water
Chocolate Icing
- 1 cup butter. softened
- 1 cup unsweetened natural cocoa powder
- 1 tsp. vanilla extract
- 5-6 cups confectioners' sugar
- 6 or more tablespoons milk
Preheat oven to 350 degrees, grease and flour two 8-inch cake pans.
Sift cocoa, flour, baking soda, salt and sugar into a medium bowl, mix well.
Combine mayonnaise, vanilla and water in an electric mixer at low speed.
Once smooth, slowly add in dry mixture until just incorporated (do not over beat).
Pour batter into cake pans and bake for 30 minutes or until done.
Cool on wire racks and frost with your favorite chocolate frosting.

Ah, yes. There was a period of time when the mayo cake was very popular, but I never tried to make one. Maybe will try in the near future.

My mom used to make a cake like this. It may seem odd to use mayonaise in a cake, but mayonaise is simply eggs and oil with a little bit of acid from lemon juice or vinegar. Just the ingredients to make a really moist cake. I hadn't thought of this cake in years. Thanks for the memories it brings back to me.

Iwonder what was going on in our country when this was developed? I am curious to the use of mayo versus the oil and eggs separately. There is a story in there somewhere. Sounds really rich and chocolate though and I am wondering if the recipe is from the 50s.

I know I've seen a cake like this before, with mayonnaise. I'll have to look. It wasn't called Duke's. This sounds like one of the brand-name recipes so that's why it's called Duke's, but it's really from another (generic) recipe. I could swear I've got one just like it from the church ladies somewhere…….

It's called that from the Duke's Mayo (found on their site)……..this one sounded closest to the one Mom used to make (that she could recall!!) See what you can come up from the church ladies…… it might be THE ONE!!

mom thought it was during WWII when things were being rationed (eggs, oil)………

I have a WWII-era cookbook I borrowed (from WV Hills) that doesn't have this cake in it, but I did find it in the church ladies' recipes. It's just called Mayonnaise Cake. To compare with the one above, I'll post it here in this same thread.
Mayonnaise Cake
Cake:
2 cups self-rising flour
1 cup sugar
1 teaspoon soda
4 tablespoons cocoa
1 cup mayonnaise
1 cup cold water
1 teaspoon vanilla
Frosting:
1 pound confectioner's sugar
1/2 cup cocoa
1/8 teaspoon salt
1/4 pound soft butter
1 teaspoon vanilla
5 to 7 tablespoons milk
Sift flour, sugar, soda, and cocoa together. Add mayonnnaise, water, and vanilla. Stir well. Pour into greased and floured 9 x 13 pan. Bake 30-35 minutes in a 350-degree oven.
While cake cools, make frosting. Cream 1/3 of sugar with butter, cocoa, and salt. Blend in vanilla and 2 tablespoons milk. Add remaining milk, one tablespoon at a time, until spreading consistency. Frost cooled cake.

That's our favorite cake around here only mine is also slightly different and we love vanilla buttercream frosting on ours.
Chocolate Mayo Cake
2 Cups Flour 1 Cup Sugar 1/2 Cup Cocoa 2 tsp Baking Soda 1/4 tsp Salt 1 Cup Mayonnaise 1 Cup Cold Water 1 tsp Vanilla
Combine all in ingedients and mix for 200 strokes, scraping bowl often. Pour into a 9×13 prepared pan. Bake at 350 degrees for 30-35 minutes
