Easy Layered Spinach Bake
1 pkg. stove top Stuffing mix for Turkey or Chicken.
5 eggs.
1 1/2 cups MOzza-Cheddar shredded cheese.
1 Onion chopped.
1 pkg frozen chopped spinach, thawed and drained.
Red pepper strips.
2 tomatoes, sliced.
Heat oven to 400F, prepare stuffing mix as directed on package.
Add 1 egg, mix well.
Press onto bottom of 9 inch square baking dish, sprayed with cooking spray
Sprinkle with 3/4 cup cheese.
Cook and stir onions (and I add some garlic and mushrooms) until tender.
Remove from heat, stir in spinach mixture.
Spoon half over cheese layer in baking dish, top with peppers and remaining cheese, than remaining of spinach.
Beat the 4 eggs, pour over ingredients in baking dish, top with tomatoes (and I add some extra cheese)
Bake 40/45 minutes until center is set

Oooooh. This sounds delicious! And a great place to use Cindy's stuffing mix. We would probably like the cornbread dressing mix for this one.
(Putting frozen spinach on the grocery list.)

Oh, this does sound delicious!!! I will definitely be trying it………I love spinach, but have found few recipes (easy ones, without a bunch of hoo ha in them) that I think I would like……….Thanks, Astrid, for sharing!

I use the red bell pepper, but I think any pepper will do.

I've got this on a recipie card now! I keep a stack next to the computer and write who contributed the recipie in the upper right hand corner. Later,I'll add a stamp or stickers to decorate them with…I'm all over it now!!
