I found a recipe for making homemade pasta with no eggs.  And after much discussion in another topic, I looked on a box of spaghetti in the store and it doesn't contain eggs either!  I thought they all did!  Except for the preservative in the boxed stuff, this is the same indredients.

Eggless Homemade Pasta

2 cups semolina flour

1/2 tsp salt (I didn't use)

1/2 cup warm water

Mix all together.  It will be quite dry like until you start kneading it all together.  Knead for about 10 minutes until it is nice and elasticy.  Roll quite thin and cut as desired.

Next time I make this, I will use the food processor.  It's alot stiffer than kneading bread or egg noodles.  But it needs to be kneaded quite a while in order for the gluten in the semolina flour to be worked through.

If you have a pasta machine that mixes everything together, follow those instructions.

It was quite good.  As there's a texture difference with egg noodles vs store bought noodles, there's a texture difference here also, but I liked it quite a bit better!  The spaghetti sauce stuck to it! Laugh

I think this could be made with Whole Wheat flour also………maybe add a little wheat gluten in?

Not at all sure about a need for any gluten since rising and structure is not an issue with pasta as it is in bread.  Don't know, in other words, but will opine anyway, right?   French
