This recipe can be doubled easily and goes with any meat and vegetable meal.

2 t. butter or margarine

1/4  c. chopped onion

1 small can well drained mushrooms stems & pieces

6 thinly sliced potatoes – I leave the skins on

1/8 t.  dried rosemary-crushed

1/8 t.  black pepper

1 cube chicken boullion  or 1 tsp. or more of powdered chicken broth mix

3/4 oz. swiss cheese – shredded

Spray 1 qt. casserole w/cooking spray.

Melt butter, add onion and mushrooms, cook 2 mins.  Stir in potatos and pepper.  Put in casserole.

In a dish or jar, stir chicken broth and add 1/3 c. water, and rosemary.  Pour over potatoes and top with cheese.

Bake uncovered at 425° for 30-35 minutes.
