My former (now deceased) MIL was a great cook and hailed from Louisa, KY. I never asked how she made her "fried" corn, but I figured it out eventually.
"Fried" Fresh Corn
fresh corn on the cob water butter salt sugar pepper
Cut corn from the cobs with a sharp knife (don't scrape the cobs). Dump the kernels in a deep & wide skillet or pot. Add just enough water to cover the kernels. Add a stick of butter, and a pinch each of salt and pepper. Bring quickly to a boil, then reduce heat to a healthy simmer and cook until the water has mostly cooked away and the corn is tender. Adjust seasonings, adding pepper to taste. YUMMO! If you did it just right, you have fresh corn perfectly cooked in a sweet butter sauce :)

How an anything cooked in a stick of butter be bad! Sweet, sweet corn in butter sauce. I could eat it for dessert.

Me too LOL. I have some left over and part of it went into some sauteed yellow squash, red bell pepper and onions this morning. Along with a big spoonful of Rotel. And a few Tbsp. of cheddar on top :)

Or skip all that other stuff and add a bit of pepper butter! Since it's so good on everything else…
Come to think of, I haven't tried it on ice cream yet.

I was following all the recipes and using real butter but my cholesterol was up in April and since the butter recipes were the only real change in my diet I decided to drop that. I did not want to go on another blooming medicine. but how sad it is to go from no butter to plenty of butter to none again.
Butter is such a blessing!

I recently read an article on butter and how varied they can be. I don't use a lot of butter but I sure like it better than margarine for it being natural (except for coloring). I do understand about the cholesterol though
