FUDGE CUPS

Shell
1 cup sugar
1/2 cup butter or margarine softened
1 egg
2 ounces (2 squares) unsweetened chocolate; melted, cooled
1/4 teaspoon salt
1/2 teaspoon vanilla
1 3/4 cup all purpose flour

Filling
1 1/2 cups sugar
1 1/2 ounce (1 1/2 squares) unsweetened chocolate cut into pieces
1/3 cup milk
1/4 cup butter or margarine
3 tablespoons corn syrup
1/8 teaspoon salt
1 teaspoon vanilla

Heat oven to 350 degrees. Grease miniature muffin cups or line with paper
baking cups. In large bowl, cream 1 cup sugar and 1/2 cup butter til light and fluffy.
Blend in egg; beat well. Stir in 2 ounces chocolate, 1/4 teaspoon salt and 1/2
teaspoon vanilla; mix well. Lightly spoon flour into measuring cup; level off.
Blend in flour, mix well.
Shape dough into 1 inch balls. Press ball in bottom and up sides of prepared
muffin cups. Bake at 350 degrees for 8 to 10 minutes. Cool 5 to 10 minutes; remove
from pan with small spatula.

In small saucepan over low heat, cook filling ingredients until chocolate is melted,
stirring occasionally. Bring mixture to a boil; boil 1 minute. Remove from heat;
stir in 1 teaspoon vanilla. Beat to cool slightly; spoon into cups.
Makes 48 pieces.

They are a bit of work (making the little brownie shells) but they are so good.  My sister, brother, and I used to beg mom to make them for us to take to school for days that we had "treats" or bake sales at lunchtime.  They just disappeared!

That filling recipe looks alot like the fudge frosting Suzanne was having isssues with!!  And this doesn't call for a candy thermometer!
