This is wonderful with fresh garden tomatoes.

Gazpacho

8 large tomatoes peeled

2 large cucumbers peeled

1 alrge green bell pepper

1 large yellow bell pepper

1 small jalapeno, seeded

1 large clove garlic

32 oz V-8 juice

1/3 c red wine vinegar

1 T. grated lemon rind

1/4 c fresh lemon juice

2-3 t. tabasco sauce

In a blender put first 7 ingredients. Add the rest except V-8 juice. Pour into a large container, like a gallon jug and add V-8 and mix well. Keep refrigerated. Garnish with sour cream and sliced avacados.

Yup, like tomato soup all mushed up together. Wonderful and cool.
