Golden Roasted Potatoes

Rinse and drain small whole canned potatoes and let "air dry" in a colander at least 30 minutes or more.
Pour potatoes on a very lightly greased baking pan with sides.
Melt butter and/or margarine, pour over potatoes, being sure to coat
all the potatoes – shake the pan to help coat.

Sprinkle potatoes with:
Seasoned salt (lightly)
Parmesan cheese
Black pepper
Parsley (optional)
Bake at 350 degrees about 25 minutes, or until potatoes are golden
brown – shake pan once or twice to keep from sticking.

Remove potatoes from pan with slotted spoon

Note: this is the best recipe I have ever found for using commercially canned potatoes. I have made these several times for 100+ people and they were a HUGE hit.

Thanks Dede – I used these potatoes at the ranch camp – I will try this recipe next time.

These would be great for camp. I get the #10 cans when we make them for a crowd. I usually don't use the parsley when making a large amount – it can burn easily and doesn't look so good LOL.

These are almost crunchy outside and moist inside and they hold well as long as they aren't completely covered (so they don't steam).

Coarse ground pepper is the best for these.

And forgot to add that no one who has commented on how good these are believes that they were canned potatoes to begin with Wink

Stupid question here…are those the canned potatoes from the store?  If so, I love those things!  I think they are good in their own right, not just as a substitute for fresh potatoes.  They wonderful prepared the way described in the "Golden Roasted Potatoe" recipe, and I like to use them in Ham, Stringbeans and Potatoes because they don't fall apart in the pot.  They are also a great pantry item to keep on hand.  Lord knows, a well stocked pantry is so important (the spectre of unemployment, don't 'ya know), and I've never heard of anyone getting tired of potatoes, LOL.

I lived on a sailing ship for 6 months …. it was a year before I could even look at mashed potatoes again.

Years ago I used to buy the canned potatoes ….. not sure why, but I do remember serving them.

Yep, from the store. or homecanned from your own hands. A well stocked pantry is insurance – against more than just unemployment, eh?
