Guinness Stout Cake with Bailey's Cream Cheese Frosting

This cake sounds weird but is the best chocolate cake I've ever had….PERFECT for St Patty's Day – an Irish beer and an Irish liqueur in one dessert Clover

1 cup (2 sticks) butter

1 cup Stout (I actually found a chocolate stout that I used)

3/4 cup unsweetened cocoa powder

2 cups all purpose flour

2 cups sugar

1 1/2 teas baking soda

3/4 teas salt

2 large eggs

2/3 cup sour cream

1.  melt the butter in a sauce pan, remove from heat and let cool a bit

2.  mix in the stout and cocoa powder

3.  mix the flour, sugar, baking soda and salt in a large bowl

4.  mix eggs and sour cream in another large bowl

5.  mix the stout mixture into the egg mixture

6.  mix the dry ingredients into the wet

7.  pour batter into one or two greased and parchment lined circular cake pans ( i used a bundt pan well sprayed with nonstick spray)

8.  bake in a preheated 350F oven – if you use a single pan it should be ready in about 40-50 mins.  if you bake it in two pans then it should take 20-30 mins.

Bailey's Cream Cheese Frosting

4 ounces room temperature cream cheese

1 cup confectioners sugar

3 tablespoons Bailey's Irish Cream (a nip is perfect)

mix everything until smooth – frost cooled cake, decorate if desired. 

I sprinkled some green sugar over the top last yr.  Silver Dragees sprinkled over a frosted bundt would look very nice too I think…

Pete….this would make a great Valentine's Day cake!  Think about it….candles, the one you love, chocolate "cake"Snuggle; as my lil nephew would say, "Come on….".  I might just have to give this recipe a try.  A few years back, I tried making a homemade rum cake; well I was younger than, by about eleven years, and actually made a frosting to go ontop of this decadent cake…well the icing was horrible and ruined the entire thing!  I made this cake for my husband….this one sounds like it would be good!  Just one question:  What is "stout"?

Stout is a very dark ale, made using a roasted malt or barley which gives it the deep dark color and the equally deep dark taste.  I happen to like it very much, though I have many friends who make yucky faces over it.  That's fine with me though since it means more for me!

If tomatoes are a fruit, then isn’t ketchup technically a

smoothie?

Since it's not for St. Patrick's Day, maybe I will try it with a dark German beer instead.  There just happens to be one of that in the 'fridge.  Maybe by St. Patrick's Day we will have enough snow free weather to get out and get some Guiness!   Surprised

Thanks Jen.  Ive got all the ingredients except the Guiness,so a quick walk to the village is on the cards for this morning
