Homemade Applesauce

juice of 1 lemon

6 lbs of apples (12-16 apples)  half sweet and half tart is a  good combination

1/2 cup light brown sugar

1 stick (1/4 lb) unsalted butter (a MUST – NO substituting!!!)

2 teas ground cinnamon

Peel , core & chop apples. Toss in lemon juice.  Place in crockpot.   Add brown sugar, butter and cinnamon.  Cook until apples are soft.  Mix with a whisk until smooth (or leave it a little coarse for chunky apple sauce).  If you add the peels of 2 red apples while it cooks it will make Pink apple sauce.

Serve warm or at room temp.

Can also be cooked in a nonreactive pan on top of the stove.

what does the butter do in the applesauce?  i've never seen this before……..interesting!

When I fix applesauce – I always add butter.  It adds great flavor.

not sure exactly what it "does" but think it probably adds richness  – every time I make this its gone in an instant – right out of the crockpot…soooo good….
