Hummus Bi Tahini (or simply Hummus)

3/4 cup tahini (can substitute peanut butter)

1 tablespoon olive oil

1/2 cup fresh squeezed lemon juice (or to suit taste)

1 tablespoon chopped garlic

1 teaspoon salt (or to suit taste)

1/2 teaspoon freshly ground black pepper

1 can (19 ounces) chick-peas, drained and rinsed

Pinch of hot paprika

1.  Combine tahini with the olive oil in a small bowl.  Stir until well blended.  Some leave out the tahini all together.

2.  In a food processor or blender puree the lemon juice, garlic and salt and pepper, and with the motor running add the chick-peas a handful at a time, alternating with some of the tahini-oil mixture and a tablespoon or two of water.  When the puree is smooth and has a creamy texture, taste for seasoning, adding more salt, pepper, or lemon juice if necessary.

3.  Transfer to a serving dish and garnish with a sprinkling of paprika.  

Serve with toasted pita bread wedges or crackers or veggie sticks.

I love hummus and usually buy it.  Have friends who make it though – it is addictive.  I dont have a food processor though.  I would not leave out the tahini though.  i think chick peas are suppose to be high in protein and good for you.

Thanks Shells!  The peanut butter would make a good substitue for the sesame seed paste (tahini).  Mike is allergic to all things sesame so I haven't had humus in a long time.  (Not since he accidently found a bowl of it I was hoarding for myself in the refrigerator and broke out in spots.)  I'll have to try making it with the peanut butter.  I'll bet almond butter would work, too.

The sesame allergy is a real pain.  Try finding a hamburger bun without sesame seeds at a fast food place.  Every kind of pre-made bread crumbs has sesame seeds as an ingredient.  No Chinese food for Mike – he can't be sure what dish may have sesame oil in it.  No Japanese food — it's too hard for the chef to break the habit of sprinkling sesame seeds on the sushi.  So, I make my own — Chinese food, even sushi. And when we go out for a burger and the buns have sesame seeds we just switch — he gets two bottoms (they usually only have one or two seeds on the side of the bun) and I get both tops, covered with seeds.  What a pain.  But I guess I'll keep him anyway.

Wow, never really thought about how much stuff has sesame of some sort or anohter. I have a friend with Celiac's so she is allergic to gluten … even soy sauce has gluten in it!!!

I have made it with peanut butter, you have to experiment a bit with how much to use and the flavor of different peanut butters makes a difference … some are really sweet so I use an all natural unsweetened unsalted peanut butter and it works quite nicely.  I bet the almond butter would give it a really nice flavor too, a bit milder like actual tahini.
