This recipe is my Grandma Josephine's Shower Cookie recipe, they are light and fluffy and iced with confectionary sugar icing. I'm not really sure what the Italian name for these are, but we make them every Christmas and Easter. I don't know how many this recipe makes, as we usually double or triple it and I have never made just one batch.

Shower Cookies

6 eggs

3 cups all-purpose flour

3 cups self-rising flour

3/4 cup veggie or canola oil or what have you

1 tsp baking powder

1/2 orange juice

1 1/2 cups confectionary sugar

Preheat oven to 350 degrees, mix everything together until well combined. (If you sift the dry ingredients, it is supposedly lighter but I am lazy). Make into little balls and place on a lightly greased (or parchment papered) cookie sheet. Bake 10-15 minutes or until lightly brown.

While they are in the oven, mix a few cups of powdered sugar with enough milk to make a thin icing. Add a few drops of anise, or if you are feeling less traditional vanilla.

After the cookies have cooled, dip the tops in the runny frosting and sprinkle them with those little rainbow colored non-pareils.
