My bottle of tarragon vinegar has about 1 cup left in it…….I'm making these pickles!
The bottle of vinegar that I have is a Gourmet White Wine Tarragon Vinegar with a bunch of tarragon in it. Do you think if I just filled it up with white vinegar, I would still get tarragon vinegar? Or would the goodness already be gone? I may just try it anyway……..will always be able to use it for something anyway.

Best guess is that the longer the tarragan sits in the vinegar, the more essence of it is absorbed by the vinegar to a point somewhere that all the goody is gone from the tarragon. On the other hand, what can it hurt to try it anyway?
I lucked out and found some white wine vinegar on clearance last fall. There doesn;t seem to be an expiration date on it, so I am not set up to have that vinegar for qutie a few batches of these pickles.
Are you planning to plant some tarragon this spring, Cindy? I'm thinking that a plant or two can't be more expensive than buying a bunch of tarragon!

Yes, tarragon will be planted in the expanded herb garden! I really do like using these flavored vinegars in other things, but I save them for something special. My sister gave me quite a few different ones as a gift, they're not something I'd normally buy.
