Junk Food Chunkies

1 cup (2 sticks) unsalted butter softened

3/4 cup granulated sugar

3/4 cup light brown sugar

2 large eggs

1 tsp Jim Beam Whiskey

2 1/4 cups flour

1 tsp baking soda

1/2 tsp baking powder

1 tsp salt

7 ounces bittersweet chocolate chopped into chunks

1 cup crushed potato chips

1 cup crushed pretzels

1/2 cup dried cranberries (or raisins)

1/2 cup chopped roasted salted peanuts

Preheat oven to 350. Line baking sheets with parchment.

Cream butter and sugars until pale and fluffy about 1 minute.  Beat in eggs one at a time, then add the whiskey.  In a medium bowl, sift together the flour, baking soda, baking powder, and salt.  Slowly add the flour mixture to the butter/egg mixture and mix until just combined.  Stir in the chocolate chunks, chips, pretzels, cranberries or raisins and peanuts.

Drop 2 tablespoons of dough per cookie on the baking sheets about 1″ apart.  Bake until lightly browned on the bottom, 10 – 12 minutes.

These are wonderful!  I had one warm…and in the interest of science, I'm going to have one cold…let the chips and pretzels become crunchy again.

I left my chips and pretzels chunky…crushed them by hand to get them just the way I wanted.  I chopped up the chocolate and stuck it in the refrigerator…then added it cold.  Peanuts…they need to look like diced walnuts…I left mine a bit too chunky.

The only healthy thing I did to this recipe was use lightly salted chips…next time I'll use regular.

The Jim Beam…hiccup…added just the right flavor to this cookie….er…maybe it shouldn't have been my first recipe of the day?

I think these will be a hit…if there are any left by the time company arrives…Help

Absolutely wonderful…cold…probably the way they were intended to be eaten.  Use your favorite nut!  (Thank goodness mine isn't a peanut…or I'd be in so much trouble!)

Not much is going to happen with just a tsp of jim beam.  I am definitely going to have to try them–junk food in the name says it all with alcohol to boot.  Happy Day!!Shroom  Maybe Little n. will go to Grandmas house for the night. . .

My budget plan is NOT getting a cart when I go to the store.
