Pumpkin & Spinach Frittata

450g of peeled/cubed pumpkin (about one pound)
2 leeks – washed and finely sliced
300g of baby spinach leaves  
(1/4 to 1/2 pound)
olive oil
2 cloves garlic crushed
8 eggs
50g matured cheese – grated  
(about 2 ounces tasty cheese)
1 teaspoon of soy sauce
400g low fat natural yoghurt  
(about  1 – 16 oz container)
Chopped fresh herbs of choice
Freshly ground black pepper

Pre-heat oven to 180C (350F) Grease a medium sized baking dish with a little olive oil. Place the cubed pumpkin in a bowl with 1 teaspoon of oil and the soy sauce, toss to coat. Tip onto a baking tray and bake for 25 mins approx. Heat some oil in a fry pan and cook leeks till soft, add garlic and spinach leaves and cook till spinach wilts. Tip mix onto a board and chop roughly. Season with black pepper. Whisk eggs and yoghurt and then add the cheese. Add on the pumpkin and spinach mix as well as the fresh herbs, stirring to gently combine. Pour mix into prepared dish. Bake for 40 mins or till set. Serve with a lovely fresh garden salad.

Cheddar is a mature cheese as opposed to mozzerella which is a fresh cheese, is my understanding
