1 stick butter (melted)
1 c white minute rice (uncooked)
2 cans cream of mushroom chicken soup
2 boxes frozen chopped broccoli (thawed)
1 small onion (chopped)
S&P (across the top when mixing)
1 bag shredded cheddar cheese (2 cup sz)
I melt the butter then combine all the ingredients (except cheese) in 13x9"baking dish.
Bake at 350 degrees for 30 mins. Then top with shredded cheddar,and bake an additonal 5 min or until cheese is melted. (Can double this recipe for a lg crowd,but I dont double the butter or cheese)and bake an additonal 15 min when doubled.

YUM YUM this is my daughter's all time favorite and I also made it for turkey day. The only difference with mine is that there's also 3/4 cp of diced celery added, water in an amount equal to the rice, and the cheese goes in with the rest of the mixture. Yesterday I made some cauliflower/cheese soup and put in a glob or two of the casserole. YUM again LOL.

This looks really good!! I don't have broccoli, but I have asparagus cuts/tips from this spring in the freezer…..I'm going to try it with asparagus!!!!

Can use 2 8oz boxes or a 16oz bag of chopped frozen broccoli. I have used the florets or sm tops before.You can also add cooked chicken in place of some of the broccoli if you want this to be a main entree.Ive added sliced mushrooms to it before too and that's good!

For those of us who do not have instant rice, can you just use cooked regular rice? Maybe a cup and a half, since the instant rice will fluff up some during the cooking? Not sure how you'd reduce the amount of liquid (Or if I'd really care!)
Am beginning to see that "Broccoli Cheese Casserole" is sort of like "Vegetable Soup." It can mean a LOT of different things! Have always liked the idea of rice and broccoli and cheese together. Eat it a church dinners whenever it is there, but the only recipes I've seen for it use the instant rice and a jar of cheese spread, neither of which we have in our house.

Well, I'm glad you brought this up, Pete!! I didn't even see "minute"! I would have just used regular rice (that's what I have) then wondered why in the heck it wasn't done! Oh my! I wonder if you could just cook some up first then add everything into it, then bake?

That's what I was thinking. We have a very small rice cooker that would be excellent for making just a cup or so of rice. (Love my rice cooker – the little one. Avoided getting one for many years, and wasted a bunch of rice during those years.)

Well that's a kitchen gadget I DON'T have!! Imagine that! But we have been eating rice quite a bit more lately…….it may be a wise investment………I too have wasted quite a bit! Rice is cheap, but not if you keep wasting it!

You know, when I first saw this recipe I'd dismissed it because of the minute-rice thing (I really dislike that stuff) which is really silly of me huh? Of COURSE I could sub in cooked rice, or, PAR-cooked rice!

We make this too, with leftover rice as well. We just call it Green Rice. I use a can of Cream of Celery and a can of Cream of Mushroom sometimes. Have been known to add leftover Turkey and serve as a meal.

I've never tried it with cooked regular rice. I would try it though,dont see what it would hurt!
