1/2 c. heavy cream

1 or 2 cloves of garlic, peeled and mashed

2 tsp. lemon juice

a wee pinch of sugar

salt to taste

Mix the garlic and lemon juice in the cream, then whip.  You want it to reach the soft, cloud-like stage, not stiff peaks.  Add the merest pinch of sugar, whip it in, then taste for salt. 

This is heavenly on just about any fish and is perfect with fresh tomatoes and/or cukes in summer.
