I used this recipe last year at Thanksgiving…….I made them up the day before. It helped me on space and time and it was delicious!!
5# potatoes, cubed
2 pkgs cream cheese
8 oz sour cream
1/2 c milk
salt/pepper to taste
Cook potatoes until tender. Drain, mash. Mix together rest of ingredients.
Put in crockpot on low in the morning to reheat (5 hours).
These can also be reheated in the oven for 45-50 minutes at 325.

Oh YUM! I love mashed potatoes, and will try this variation. Almost wish I was having Thanksgiving at my house so I could do this early prep thing!

Wherever I found this (I thought it was here last year), someone said about making these in LARGE portions then dividing up into freezer bags in their family portions. Doing all the work once, then just taking out what is needed for that night's meal! I did do this for a 10# bag of potatoes once, it was nice, but just never did it again! It didn't get put on the list to do!

It would be nice having those bags of taters to pull out when you need them!
