3 cups fresh mango –  peeled and diced

1 cup celery – chopped

1/2 cup red pepper –  chopped

1/2 cup red onion –  chopped

1 – 15 oz. can whole kernel corn – drained

1 can black beans – drained

1/4 cup green chilies – diced

salt and pepper to taste

Dressing

1/4 cup finely chopped fresh cilantro

1 tablespoon mned crystalized ginger

1 tablespoon curry powder

1 teaspoon salt

1 teaspoon garlic – minced

1/2 teaspoon celery seed

1/3 cup liquid honey

1/4 cup fresh fresh squeezed lime juice

1 tablespoon olive oil

This salad is very good.  Play with the seasonings, add extra things, make it your own salad.
