Another of my dear late ex MIL's fav recipes. She loved having this on hand to make a sandwich into a real lunch.

Marinated Vegetable Salad

• 1 15-ounce can tiny peas, drained

• 1 11-ounce can white shoepeg corn, drained

• 1 15-ounce can French-style green beans, drained

• 1 2-ounce jar pimentos, chopped and drained

• 1 medium sweet onion, chopped

• 4-5 stalks celery, chopped

• 1 green pepper, diced (optional)

• 1 diced cucumber

Marinade

• 1/2 teaspoon salt

• 1/2 teaspoon black pepper

• 1/2 cup oil

• 1/2 cup water

• 1 cup vinegar

• 1 and 1/2 cups sugar

Combine canned and fresh vegetables in a medium-size bowl. In another bowl, combine marinade ingredients and heat in microwave until sugar is dissolved. Allow marinade to cool, then pour over vegetables. Refrigerate salad for 24 hours and drain off marinade before serving. This salad keeps in refrigerator for about one week.

Ah, yes.  This was a favorite in a LOT of households.  Used to take it to pot lucks and such.  The recipe was given to me as "24-hour salad."  Whatever it's called, it is yummy good!  And lasts a long time, as in stores well.

Yes, really good keeper and maybe time to bring it back LOL. There's also an 'oriental' version out on the web with bean sprouts and such I think. I made a double batch of this morning for tomorrow and for my daughter to take to her Dad as a sentimental dish for both of them :)

I don't add the bell peppers – I like the pimiento flavor to be the pepper note.

I loved my ex MIL dearly and though I divorced their son my IL's never divorced me at all HeartHeart

They have both been gone for a while now, but I think of her especially through recipes.

My daughter dearly loves her Dad and he's disabled (amputee/dozer accident).

My brother sometimes says "I don't understand you". LOLOL

I understand it wvhomecanner Hug circumstances sometimes get in the way.  Most of my ex in-laws were much the same bless their hearts and kindness goes a long way no matter what.  It's not a case of him being your ex, he's your daughter's father and that counts for a lot as long everyone lets it count.  Besides, time does heal. //editing to say// well, it may not ALWAYS heal, but it can often mellow! LOL

If tomatoes are a fruit, then isn’t ketchup technically a

smoothie?

I understand it too wvhomecanner.  My husbands parents divorced, both remarried and both sides always got together each holiday.  Shoot….we all got together at a drop of a hat.  They loved family get togethers and we really didn't need an excuse!  When I first started dating David I thought how weird that his Mom and her husband got along so well with his Dad and his wife.  But after years of it being that way I thought nothing of divorced spouses getting along better than when they were married.

I like this recipe!  I don't know if I have ever ate it but I do know I like everything in it and love anything with vinager in it.  Heck…I'm someone who loves to drink olive juice!  LOL

That sounds good.  I can't eat carbs much, but my hubs can, and I like to keep a bowl of something "carby" in the 'fridge for him to add to his dinner plate, and I just know he'd like this salad…thanks!

LOL well I just came BACK from the store because I needed a few things to make Potatoes Supreme and this salad – decided on a double batch of this. Maybe he did need a break LOL – did he run out the door really fast? Wink

He was moving pretty fast!  He had his hand on the doorknob about the time I got "Could you go…." said! 

But the salad is marinating now.  Decided to use half red bell and half green bell and left out the pimento, this time.  Dumped everything into a 1 gallon jar and started shaking.  Worked fine, without using an extra bowl and stirring spoon!  When I've made this in the past I haven't bothered with the heating part, and didn't this time, to save time, since we are now within the 24-hour time frame.  Everything seems to have dissolved OK.

I am LOL because I am using a gallon jar too! And I don't heat it either – dissolves fine in a short time. I like the jar 'method' for faster marinating, too – shake now and then works great, eh?
