1 large cauliflower, cleaned and cut into florets

1 tbsp butter (not margarine)

1/2 c. shredded sharp Cheddar, or Parmesan, or 1/2 cube cream cheese, or a combination that suits you. 

Boil the cauliflower in lots of well salted water until the vegetable is beyond done.  You don't want crisp cooked cauliflower, you want limp, flabby, exhausted looking cauliflower.   Drain it extremely well, return it to the pot in which it boiled, turn the heat on low to finish drying it while stirring, then add the butter and cheese.  Mash it with a potato masher or whip it with a manual beater.  Taste for seasoning, correct if necessary, and serve. 

It makes a nice side dish, is extremely low carb, and has been eaten with relish by people who profess to hate the humble cauliflower.
