Mile High Pies were popular in the late 70's around here. My mother made strawberry ones, once for a bridal shower..and for us…I was fascinated by the height. I don't have HER recipe, but I did find one, so here it is:

                                           Mile High Pie

1 TBSP. Knox gelatin                                  1/2 cup crushed pineapple, crushed

1/4 cup cold water                                      4 egg whites

1/2 tsp. salt                                                 1/2 cup sugar

1/2 cup sugar                                              1 baked 9 inch pie shell

4 egg yolks                                                   Whipped Cream

Soak gelatin in cold water. Cook in double boiler 1/2 cup sugar, salt, egg yolks and crushed pineapple until mixture coats a spoon. Remove from heat and add gelatin. Let mixture cool until thick. Beat egg whites until very stiff, add 1/2 cup sugar. Fold into pineapple mixture. Pour into baked pie shell. Refridgerate for 1 hour before serving. Garnish with whipped cream.

I have never made this…but my mothers stood a good 8 inches or 9, tall…they were sooo cool. But, I keep thinking SHE added her cool whip to the mixture and then froze it…so, you may want to search around, surf around for other MILE HIGH PIE recipes, to compare.
