Use those Scoops chips. Make your favorite ground beef taco filling ahead (put in food processor after cooking and cooling to make it a finer texture). Put in a ziploc bag and freeze or refrigerate. To serve, clip the corner off of the bag and pipe a bit of meat mix in each Scoop. Top with grated cheese of your choice and bake until the cheese melts a bit. You can add or offer other toppings (sour cream, chopped green onion, etc.) or not.

They disappear quickly.

What a good idea!  Would look kinda special, but still not cost an arm & a leg either in time or expense.
