My Favorite Yeast Rolls

Yeast Rolls

2 packages dry yeast
1 tsp sugar
1 c warm water (105-115° F)
2/3 c sugar
1 tsp salt
1 c butter, softened
1 c boiling water
2 eggs, beaten
6 – 7 c all-purpose flour, divided

Dissolve yeast and 1 tsp sugar in 1 cup warm water; let stand about 5 minutes.

Combine sugar, salt, and butter in a large bowl.  Add boiling water, stirring until butter melts. Cool slightly. Add dissolved yeast, stirring well. Add eggs and 3 cups flour, beating at medium speed of an electric mixer until smooth. Gradually stir in enough remaining flour to make a soft dough.

Place dough in a large bowl coated with cooking spray, turning to coat top. Cover and let rise in a warm place (85° F), free from drafts, 1 to 1.5 hours or until doubled in bulk.

Lightly coat three 9-inch round pans with cooking spray. Punch dough down; turn dough out onto a well-floured surface, and knead several times. Shape into 2-inch balls, and place 12 balls into each prepared round pan. Cover and let rise in a warm place (85° F), free from drafts, 30 to 40 minutes or until doubled in bulk.

Bake rolls at 325°F for 20 to 25 minutes or until golden. Yield: 3 dozen.

I would make the yeast rolls, then brush the tops with butter and dip them into sesame seeds or poppy seeds. That's what we looked forward to when I was growing up – rolls with seeds. We also had another tradition with rolls – we either forgot to put them in the oven until we were half through Thanksgiving dinner, or we would put them in the oven, but forget to take them out until the cloud of smoke made it to the dining room.

One of my favorite memories of cold weather is from my friend's mom.

She would always get up early on cold mornings, bake yeast rolls and give us one to take with us on our walk to school.  I still crave her rolls. 

I am saving this roll recipe for Christmas.  I'd do it for Thanksgiving, but I delegated the rolls to one of the boys.  We'll see what he brings.

I made your rolls Deb.  They were so easy to do and came out great.  I split the dough in half and made cinnamon rolls with raisins and cream cheese frosting with half and rolls with the other half.  My husband devoured them.  We have eaten little but bread and rolls lately while I search for the perfect dinner roll for Thanksgiving.  Just when I got close, my mother offered to bring them.  She makes the BEST rolls. So, thanks for a great recipe.  I will use it often, after we take off the weight we put on searching for a great recipe!
