Nutty Orange Coffee Cake
¾ cup sugar
½ cup chopped pecans
2 teaspoons grated orange rind
½ (of 8-oz) package cream cheese
2 – 11 ounce cans refrigerated buttermilk biscuits
½ cup melted butter
1 cup sifted powdered sugar
2 tablespoons fresh orange juice
-Combine first 3 ingredients and set aside.
-Place about 1 teaspoon cream cheese on half of each biscuit; fold biscuit over cheese, pressing edges to seal.
-Dip biscuits in melted butter and dredge in sugar mixture. Place curved side down in a lightly greased 12 cup bundt pan – space evenly. Drizzle any remaining butter over biscuits; sprinkle with remaining sugar mixture.
-Bake at 350 degrees for 40 minutes or until done. Immediately invert onto serving plate.
- Combine powdered sugar and orange juice, mix well. Drizzle over warm cake.

That looks fantastic! You could make that with homemade biscuits, too!

Am guessing that this is one where the use of the smallish biscuits would be better than using the huge ones? As counter intuitive as it sounds, in recipes I've tried using canned biscuits, the cheapy ones actually produce a better end product than using the better canned biscuits. Maybe because there is less biscuit to filling ratio?

The only canned biscuits we have on hand right now are 7.5 oz ones. They have 10 biscuits each in them. (They are an off brand, bought as an experiment.) Bee's recipe call for 2-11 oz cans, or 22 oz of biscuits. Figured I'd try it with three cans of those (22.5 oz), and that would be 30 biscuits. Maybe an excuse to use more cream cheese?
And we don't have any oranges, but do have some tangerines. Anyone ever try using tangerine zest?? Hmmm.

I'm not sure how tangerine would taste, but hey, it's citrus, it's orange…
The first time I made orange marmalade I only had grapefruit. So, grapefruit marmalade. It worked.

Oh, how lovely! Somewhere in Scotland (iirc) I had grapefruit marmalade and it was wonderful! May have been in London, but it seems that it was around Inverness. In an old castle turned into a B&B, with bedrooms in the old stables. Thanks for bringing that memory out!

Okay, so I made this today!!! Way too awesome!!! It was supposed to be for dessert, 2 of the daughters were over, so we had a taste……..and it didn't last 15 minutes!!! So we weren't hungry for dinner, maybe in a little while. hehehehe.
I used Suzanne's Bisquits and used buttermilk for the biscuits instead of the cans of biscuits. FYI — 20 will work!! I did 30 with cream cheese in, but they didn't fit in pan, so I just brushed with butter and put cinnamon sugar on top, then powdered with powdered sugar when they cooled just a bit. Those were great too!
Thanks, beeyourself! Another great recipe!
