I don't know why it is called Pandy's. LOL It was from a tea room. My sister and I LOVED this when my mother would make it.

                                     Pandy's Chicken Salad Pie

2 cups diced cooked chicken

1 and 1/2 cup finely chopped celery

1 green onion, top also

1/2 cup sharp cheddar cheese

1/3 cup pecans, broken

1 cup Potato chips

                                    Dressing

1 and 1/2 cup mayonaise

1/2 tsp. med. grind black pepper

1 Tbsp. lemon juice

1/2 tsp. Accent

1/4 tsp. salt

        Combine dressing ingredients. Pour over other ingredients and mix. Turn into (partially baked, not fully baked) pie shell. Top with crushed potatoe chips. Bake at 350 for 25 minutes.

*** The success of  a recipe using boiled chicken depends on tasty chicken. For best results, cover chicken with salted water (1TBSP salt to 1 quart water) and refridg. at least one hour or overnight. Drain and boil in salted water (same measurement above) with celery tops and onion. Cool in it's broth. Remove bones and chop.

(We always used chicken breasts and 3 breasts equal about 2 cups).

I put boken pecans in my chicken salad when I want to get fancy, I have also used pineapple chunks, then serve on a bed of fresh lettuce with crackers or pita chips.   In order to cut back on the heavy mayo taste, I mix some of the stock with the mayo, you still have the flavor, but not the thick heavy texture.
