I'd be glad to share! I first tasted it when we moved to the Nashville area. It was love at first bite!
Pine-Apple Cheese Casserole
2 20 oz. cans pineapple chunks
1 cup white sugar
2 cups grated cheddar cheese
6 TBLS. Flour
6 – 8 TBLS. Butter, melted
2 cups buttery crackers, crushed (Ritz or Townhouse)
Drain pineapple RESERVING 6 TBLS. pineapple juice.
In mixing bowl, combine flour and sugar. Add reserved juice; mix well. Mix will be very thick like paste.
Add cheese and pineapple to paste, stir to coat everything well.Pour into greased 9 X 13 dish.
Combine melted butter and cracker crumbs. Sprinkle evenly over pineapple mix.
Bake at 350 for 25 to 30 minutes.
You can easily halve this recipe or triple it. It goes very well with ham or pork.

My SIL makes this dish…..the combinations make a wonderful flavor!I was surprised how good it tasted! (now I have recipe tee-hee) Thanks!

I think you all will enjoy it. It does seem like an odd combination, but I LOVE it! I always have some pineapple tucked away in the pantry…….and there's always cheese!

We have a ham that needs to be cooked soon. This will go great with it as a change from the usual sweet potatoes, and be a little less like a holiday meal.

This is one of my favorites, it goes very well with ham. And it good as leftovers, just nuke it in the microwave.

This was a HUGE hit! None of us had ever had anything like it. Only four of us, so made the half recipe. I left the small amount that was left with the hostess, and am wondering how long it will take to make another batch to go with the ham she sent home with us!

I'm so glad that you all liked it! Of course, I made a dish for our Easter dinner with friends. None of them had tasted it before and kinda looked at it funny, but I sure didn't have much leftover!

Didn't have any more chunks of pineapple, but ended up making another half batch of this last night – using crushed pineapple! It tasted just dandy, but I prefer the "look" of the chunks – more texture. The tidbits would be a good compromise ! Or as we decided last night – whatever is handy will be just fine…

I'll have to remember to use crushed or tidbits in a pinch, Pete. I have cut up pineapple rings to use. We had leftovers with our leftover ham for our supper last night. It's still good!!
