I haven't made this for years but came across it yesterday and it reminds me of my wonderfully frugal Aunt Janie who made this and divinity every year.

Potato Candy

1 medium to large potato

powdered sugar

creamy peanut butter

Boil peeled potato until done. Mash as for mashed potatoes but do not add milk or butter.  Add enough powdered sugar to make a dough that can be rolled out on a powdered sugar covered cutting board. Spread peanut butter over the rolled out dough. Roll up as for a jelly roll. Slice roll into thin slices. Dry slices on waxed paper on one side then flip and dry the other side.

I used to work with a woman that made something similar for all of us in the office.

she took the potato dough and rolled it in small balls & dipped in chocolate.  if im not mistaken i think she also added peppermint to the dough so it was like a peppermint pattie… they were SOOOOO good

I make this candy every year at Christmas.  I would recommend using a potato the size of a golf ball or so.  For some reason, after boiling and taking it out of water the potato when you add the powdered sugar gets wetter and wetter.   Unless you have alot of powdered sugar, a small potato is enough.  Just seems keep soaking it up.  Just a head's up.

Oh Quietstorm, the peppermint sounds good!  We had a neighbor who made this with coconut mixed in also. (no peanut butter) and dipped them in dark chocolate, almost like little Mounds Bar bites, why not with almond bits too?.  I can just picture several variaties in a little gift tray or tin.  Wow!  You know what?  I have all these ingredients!

If tomatoes are a fruit, then isn’t ketchup technically a

smoothie?

I made this, this morning!  I put about a cup of finely chopped nuts and a drop of peppermint oil, rolled into balls and dipped in chocolate.  Yum!! 

I used a medium potatoe and about a bag of powdered sugar.  It made 2 doz balls.

I'm sure I've had these before, but just never knew the base was a potato!!
