Offline8-10 potatoes,cut up
2 stalks celery,chopped
1 onion chopped
1/2 stick butter
6-8 cheese slices
2 cups milk
Cook potatoes, onion and celery in water until tender. Then add butter,cheese and milk, let simmer 15-20mins. Salt and pepper to taste. Serve immeadiately. Parsley can be added if desired. Also, may subsitue 1 sm can of chicken broth for some fo the water.

OfflineOne of Mom's caregivers taught us an odd thing to do with potato soup that adds a ittle something to it. She put a slice of bacon, the whole slice, in with the potatoes as they cooked and then took it out. If it didn't look as though it had rendered enough, or added enough taste yet, she left it in after adding the milk. In any case, it was removed before serving. It DOES add a bit of smokiness that we came to like. Just a hint.
That's the way I was taught to make potato soup, too, Pete. Soup was done when the bacon looked just right. This was one our staple meals in the winter………every Saturday for lunch, and it became my job to make it when Mom started working out of the house. Sometimes, if there was enough bacon, I would fry some up and add in at the end, after adding the milk. I didn't use cheese or the celery, but I'm sure that would just be all the better!!!!

OfflineIf adding bacon to your recipe, Leah, I'd probably cut back on the butter, like maybe half of it?? Not sure about that, but with the cheese (which is a terrific addition to potato soup!) there should be plenty of fat! Please do let us know how it works. If that bacon doesn't find it's way into something else!

OnlineNo bacon in mine (though I love bacon). Taters, lots of onions and celery, chicken broth, bit of butter and I use evaporated milk. And run a stick blender quickly through to pulverize a little of it to thicken. Also can thicken with dehydrated (instant) potatoes. Some in my house like it brothy, some thick. Oy LOL.
My daughter's friend across the street made some two weeks ago that I tasted. It was KILLER in more way than one LOL. More like a super loaded baked potato soup :) Unpeeled taters (good) but she also added a bottle of ranch dressing and a bunch of cheeses and some sour cream and some bacon.
Can you say heart attack in a bowl? LOLOL
She's pregnant as is my daughter – due just weeks apart. They were HAPPY lol.
