Pumpkin Toffee Cheesecake

Crust:

1 3/4 c (about 14-16) shortbread cookies,crushed

1 T butter,melted

Preheat oven to 350 degrees.

Combine cookie crumbs and butter in small bowl. Press onto bottom and 1in up side of 9in Springform pan. Bake for 6-8 mins. (do not allow to brown) Cool on wire rack for 10 mins.

Cheesecake:

3 pkgs (8oz ea) cream cheese,softened

1 1/4 c brown sugar,packed

1 can (15 oz) Libbys 100% Pure Pumpkin

1 5fl oz can Nestle Carnation Evaporated Milk

2 lg eggs

2 T cornstarch

1/2 t ground cinnamon

1 c (about 25-30) toffee candies,crushed

Beat cream cheese and brown sugar in large mixing bowl until creamy.  Add pumpkin,evaporated milk,eggs,cornstarch and cinnamon;beat well. Pour into crust. Bake 60-65 mins. Top with candy pieces.

Topping:

1 8 oz container sour cream @ room temperature.

2 T granulated sugar

1/2 t vanilla

caramel ice cream topping (optional)

Combine sour cream, sugar,and vanilla in small bowl,mix well. Spread over warm cheesecake.

Bake for 8 mins. Cool completely in pan. Refrigerate for several hrs. Remove side of Springform pan. Drizzle with caramel topping before serving.  Yields 16 servings.

Oh, my.  Does this sound like just about the best thing in the entire universe?  Oh, my, oh MY!!  Yes it does, yes, oh yes.  Must go make some shortbread right now.  Got the caramel sauce, the cream cheese, everything but the sour cream and the candy.  Well worth a trip to the store!

Have been looking at a very old cookbook and it says to use swieback for the crumbs for a cheesecake crust.  Hmmm.  Makes sense.  Wonder if swieback is still available? 

Oh – just remembered a package of Werther's Origninals!  Bet that would work just fine for the toffee.

You should see the picture of the cheesecake,oh my goodness! I think the Pecan Sandies would make a good crust too,I'm going to try that and the Werthers candies.  You're welcome!

Yes, using the pecan sandies does sound like a great idea.  Then, you could break up some pecans to go with the caramel sauce, or just put a few pecans on top of the whole thing as a garnish.  Wouldn't THAT be even more impressive than it already sounds!

Guess we are supposed to wait until fall for the pumpkin desserts, but we really need to test this out just to make sure it is worthy of our friends and families, don't we, Leah?

Yes I would have made it already today,but there's a BD party tomorrow before wk. I cant wait to long to try it out! Cant go wrong with those wonderful ingredients tho!
