I don't know if anyone has posted something like this, but here is a recipe for a sweet spread to go with quick breads.

Quick Bread Schmootz

Ingredients:

8oz Cream Cheese, softened

1 small can (the tuna can size) crushed pineapple, well drained

a few tablespoons of powdered sugar

1 teaspoonful vanilla extract

Proceedure:

To the softened cream cheese, add the powdered sugar until its the sweetness you like.  Use more or less according to taste.

Stir in the vanilla

Stir in the drained pineapple

This is really good on top of a slice of quick bread, but my favorite way to eat it is as a kind of sandwich filling between two slices of quick bread.

With a filling like that I think I'd just skip the bread and go right for a spoon!!! Fork  Or a fork…

Oh Yum!

ANd if you leave out the sugar and vanilla, and add onion and bell pepper…. you have another delicious spread (or cheeseball).

It's a bread more like a cake……has no yeast………banana bread, zucchini bread, pumpkin bread…..

You know, like Banana Nut Bread, or Zucchini Bread, or Gingerbread…any chemically leavened "bread", which of course is really more like cake.  It might go well with a steamed pudding, too.

Helen, that sounds so good!  I might have to attach that recipe to the loaves of banana bread I put in gift baskets this year.
