Ramp Soup

6 Med. potatoes

2 small onions

salt (to taste)

1/2 tsp. pepper

1 cup diced ham

1/2 cup chopped ramps

2 cups carnation evaporated milk

1/2 cup crumbled slab bacon

1-2 slices American cheese

3 tbl. flour

Milk to make thickening for soup

1/4 cup butter

Peel and dice potatoes and onions.

Cook potatoes-onions-ham-bacon-ramps-salt & pepper in 3 cup water until potatoes are done.  Add 1/4 cup butter and let melt, then add milk and bring to boiling point but don't boil.

Mix flour & some milk for thickening and add to soup, cook until starts to boil , turn off heat . Lay American cheese slices on top of soup and stir until melted . Serve.

That sounds really good!  I finally found some ramps up behind our house this afternoon!  Yay!

   We keep ramps to use in winter by cleaning & dry them & vacuum pack & freeze .

 Some say you can put ramps in freezer bag with water & freeze , I havn't tried this .
