While reading some old post's, I came across this request for a recipe for Ranger cookies. I have a recipe for Cracker Jack cookies that has similar ingredients, but some in different quantities and some additions.

Ranger Cookies

Ingredients

1 cup butter                                       1 teaspoon baking powder

1 cup white sugar                               1 pinch salt

1 cup packed brown sugar                  2 cups quick cooking oats

2 eggs                                                 1 1/2 cups flaked coconut

1 teaspoon vanilla extract                    2 cups crisp rice cereal (rice krispies)

1 1/2 cups all-purpose flour                 1 1/2 cups chopped salted peanuts

1 teaspoon baking soda

Directions

1. Preheat oven to 350 degrees F (175 degrees C.) Grease cookie sheets

2. In a medium bowl, cream together the butter, white sugar and brown sugar. Beat in the eggs one at a time, then stir in the vanilla. Sift together the flour, baking soda, baking powder and salt, stir into the creamed mixture. Gently stir in the oatmeal, coconut, rice cereal and chopped peanuts. Try not to pulverize the rice cereal.

3. Drop dough by teaspoonfuls onto the prepared cookie sheets. Bake for 10 to 12 minutes in the preheated oven. Remove from cookie sheets to cool on wire racks.

These are crispy on the outside, but chewy in the middle.

My Grandma always used stale cornflakes instead of the rice cereal. It was a way to clean up the cereal left at the bottom of the box.
