Note…the recipe for the cake does not contain butter or oil…and it's wonderful!

Reunion Cake

1 20 ounce can crushed pineapple (with juice)

2 cups sugar

2 cups flour

2 eggs

2 teaspoons baking soda

1 cup chopped pecans or walnuts

   (plus some for the top of the iced cake)

Mix the above together.  Bake in greased and floured 13 x 9 inch pan at 350 degrees for 35 – 40 minutes to until it tests done.

Icing

8 ounces cream cheese (softened)

2 cups powdered sugar

1 stick butter

2 teaspoons vanilla

chopped nuts

Mix while cake is baking.  Spread on hot cake as soon as taken from oven.  Sprinkle some chopped nuts on top.  Refrigerate after cooling.
