1 cup mixed peppers and onions (I used mostly sweet green peppers and a bit of hot pepper)

1 pound ground sausage

1 tablespoon minced garlic

6 medium potatoes, baked

6 cups milk

1/2 cup sour cream

1 1/2 cups cheddar or pepper jack cheese, shredded

salt, to taste

coarse ground pepper

fresh chives

Cook peppers, onions, and sausage with garlic in a frying pan.  Drain and spoon into a crockpot (or pot on the stovetop).  Skin and cut up baked potatoes.  Add to pot along with milk, sour cream, cheese, salt, and pepper.  Heat for 20 minutes (or simmer longer if you need to delay).  Add chives to the top at the last minute.

I made this up for dinner tonight and it was great!
