My mother used to make this and I LOVE it…alot like Ritz Pean Pie – similar

                                             Soda Cracker Pie

3 egg whites, beaten stiff                          1 tsp. vanilla

1 cup sugar                                              3/4 cup pecans, chopped fine (hers were not REAL fine)

12 soda crackers, broken up                     1 tsp. baking powder, added to cracker crumbs

Mix together above ingred.'s and pour into a 9 inch greased pie pan and bake 325 degrees for 30 minutes. When cool and ready to serve, top with Cool Whip and drained crushed pineapple.
