Squash Pie

1 1/2 cup squash,cooked, mashed and unseasoned
1 teaspoon ginger
1 teaspoon cinnamon
3 eggs
2 teaspoon all purpose flour
1/8 teaspoon nutmeg
1/2 teaspoon mace
1/4 teaspoon salt
1/2 cup milk

(I prefer to use 3/4 above spice for a milder, but still delicious pie.)
Mix all dry ingredients together. Add squash. Beat eggs in another bowl and add milk to eggs, then add to squash mixture. Pour into an unbaked pastry lined pan. Bake at 350F until firm in center, about 1 hour

Oh, goody!  Here come the squash recipes!!

It was funny, but at the produce stand where I saw my first winter squash, a lady was getting butternut squash for pie making.  She and her husband swore that they make better pies than pumpkin.  Will certainly be testing that theory.  Soon.

I have made the butternut squash pies. My crew like them better than pumpkin not as strong. I buy them up in the fall and put them in the dairy and use all winter. Around here in Tennessee the squash/pumpkins didn't do well it was to wet. Butternut squash here this year was a lot smaller.
