OnlineI keep forgetting I have this recipe – and I don't remember where I found it, but how fun is this?
I have to do this ASAP!

Squeeze Noodles
• 2 eggs
• 1 tsp. Salt
• 1 cup milk
• 2 cups flour
• Soup broth
Directions
Beat eggs and blend in milk. Add dry ingredients and mix well. Pour into a plastic ketchup bottle.
Pour chicken broth into pan and bring to a rolling boil. Keep at rolling boil while you squeeze the noodle mixture into the broth. Amount depends on size of noodles you want. Noodles will float to the top as you still put more mixture in broth. They will cook quickly; test for tenderness with fork.

I made chicken and noodles (almost a dumpling). I used the Squeeze Noodles recipe that dede posted not too long ago. Instead of a ketchup bottle with a round hole I used a Miracle Whip plastic bottle that had the horizontal slot rather than a hole. That allowed the batter to be squeezed out in more of a flat noodle shape. I usually make stretch dumplings and that is more work and a mess to clean up because you roll out a very wet dough, this was very good and no mess. Instead of 1 cup milk I used 1/2 c milk and 1/2 c chicken broth. Was fun and delicious! Sandra |

OnlineAwesome noodles!!!!! My batter didn't really pour….so I had an issue putting in ketchup bottle, but they were worth it! Next time, I'm going to use a baggie and snip the corner off. And I'm going to try the non-egg recipe with this same consistency to see how they taste…………..I could see this working so nicely!!

I put mine in a Miracle Whip bottle, so it had a wider mouth and the opening was a slot rather than a hole so the noodles were wide and flat. They were awesome! And so easy. I can't wait to make more. They were even more tender the next day because they absorbed more liquid. Much easier than stretch dumplings and every bit as good! I am glad you will give it another try, they are worth it aren't they. |
