I've been experimenting with making my own stove top type of stuffing.  I've come up with a recipe that everyone likes, so I've made up baggies of the mix to use just like the box.

Stuffing in a Bag

Put in ziploc bag:

3 cups bread crumbs (whatever size you want, I made my own using the grater attachment on my processor)

1/2 TBL parsley

2 TBL dried onion or 1 TBL powdered onion

2 TBL dried celery or 1 TBL celery salt (I would use Mrs. Dash for a no-salt recipe)

1 tsp thyme

1/2 tsp pepper

1/2 tsp turmeric

1/2 tsp sage — If you like a sage stuffing.  I don't use it all the time and just mark my bag "Sage".

1 1/2 TBL powdered boullion or 1 1/2 cubes boullion, crushed (or you can replace the water with broth when cooking the stuffing to eliminate this ingredient)

Directions for cooking:

Bring 1 1/2 cups water (or broth) and 1/4 cup butter to boil in a saucepan.  Stir in contents of bag; cover.  Remove from heat.  Let stand for 5 min.  Fluff with fork.

EDITED THE BOULLION AMOUNT!!!  1/27/09  9:40 p.m.  The original was for the 2x amount I've been making!!!  Sorry!

This is great Cindy!  I make stuffing from scratch fairly often, it's not all that much trouble if I have the time, but time is the tricky part some days. 

I like this a lot, those boxed ones (which will remain nameless, but you know which I mean!) are SO SO SO salty! 

I'm going to make this tonight, and mix up a couple more at the same time to store for other nights.  I just so happen to have chicken breasts to bake tonight!

If tomatoes are a fruit, then isn’t ketchup technically a

smoothie?

I've always love the fastness of that boxed brand……but the salt is just huge and it's $2 a box!!!  My bread crumbs are just stale bread…..or even just using a homemade loaf for this — the loaf cost 25 cents to make and you can make quite a few bags!!

And I forgot to mention, if you like the cornbread stuffing, just use cornbread crumbs!!!

Cindy-this combination of herbs sounds good-i'm going to try your recipe when I get a chance. I ocasionally use the boxed stuff when i'm in a hurry, but I use more bread because it is so strong on the spices. I most of the time will make it from scratch and make stuffing balls.

Thanks Cindy for working it out and sharing it! I love celery salt and when I went low sodium I did find ground celery seed in the Amish store – great for getting the flavor without the salt. Also works well for those with picky family members who weird out over 'lumps and bumps' in food (those folks would starve at my house lol). AND an added plus – I use it in salads and dressings when I need to eliminate celery seed for for those who can't have seeds.

I've never seen ground celery seed……but then I don't think I've every looked!!  I just put some celery through the dehydrator and that worked great for this!  and I did the onions, too.

Great sounding short cut on struffing, Cindy!  Can hardly wait to try it.  The dehydrated onions and celery would be wonderful in it, for sure, for sure.

I adjusted the boullion amounts in the orignal recipe…..the original amount was for the 2x amount I had been making!!  all the other amounts were right for the single "box" amount.  Sorry!!!

I keep some in a kitchen herb pot on my back porch off my kitchen. When i'm cooking it's so hand to have herbs  for cooking nearby so you use them more often,rather tahn having to go out to the garden!Happy Flower

FYI: Lovage isn't safe for those pregnant or nursing.

I have never thought of putting turmeric into stuffing…it makes sense. Good idea!

I put in a bit of apple and a touch of apple juice to my stuffing, but not the boullion/broth. It gives it a very nice flavor.

Alanna, I planted lovage in a shady part of the yard last year. I had heard it was a good celery substitute. I wonder if the seeds are usable like celery seed. Can't wait to see if it comes back up this year.                           

LK, I don't remember ever hearing that it was unsafe for pregnant and nursing women. Thanks for the warning. I wonder if there is a certain amount that is unsafe or if it is just generally unsafe. More research needed. At any rate, pregnant and nursing is not likely to happen around here anytime soon. (From my lips to G-d's ear)
