A very simple and quick way to get those black-eyed peas on New Year's day:

1 can black-eyed peas, with thick pot liquor (like Luck's or Bush's)

1 small can chopped green chilis (do not drain)

1 small jar Old English cheese spread

1 small onion, chopped fine, or part of a larger one, or however much you want, just chop it fine

Place all in a microwave dish.  (I use a small, oval antique Pyrex glass casserole dish.)  Heat until warm and able to be mixed well.  We like crunchy onions, so we don't really "cook" it, just heat it through.

Serve immediately with tortilla chips.  Beer or wine on the side is optional.  This should reheat well, but we don't know because there is never any left.

Sounds good – I use Old English Cheese in my olive cheese balls I  make every Christmas.  I am trying to picture this in my mind – hmmm – now I will have to try it.  I do a blackeyed pea salas that is great too.

Add one more request for the black-eyed pea salsa!  I love black-eyed peas and would like to try them in a salsa.

In case it isn't clear, this "caviar" is really a dip…
