Now, I don't really know if it is The Absolute Best,  but it's very good!  I got this recipe from a friend.

The Absolute Best Blueberry Pie in the World

1 1/4 cups milk

2 egg yolks, beaten

1/4 cup plus 2/3 cup sugar

5 tablespoons cornstarch

1/2 teaspoon vanilla

2 tablespoons butter

1 tablespoon lemon juice

4 cups blueberries

1 deep dish pie shell, 9-inch, baked and cooled

In a 2-quart saucepan, mix milk, yolks, 1/4 cup sugar and 2 tablespoons cornstarch.  Cook over medium heat until the mixture boils and thickens, stirring constantly.  Stir in vanilla and 1 tablespoon butter.  Transfer the custard to a shallow dish; cover the surface with plastic wrap and refrigerate for 2 hours.

Meanwhile, in a 3-quart saucepan, stir in 1 cup of berries with 2/3 cup of sugar, 3 tablespoons of cornstarch and 1 cup of water.  heat to boiling over high heat.  Cook for 2 minutes to thicken, stirring constantly.  Stir in lemon juice and 1 tablespoon of butter.  Cool.  Then stir in remaining berries.

Spread the custard in a pie shell.  Top with the berry mixture and refrigerate for at least 3 hours prior to serving.

It sure SOUNDS good!

Perhaps as a public service someone who has some frozen blueberries should try this and report on that for us, Georgia.  I'm iced in or I'd volunteer.  If I had the blueberries.

Hmmm.  Might even work with other berries…

My mom always froze her berries – and made pies with them.  I don't know why you couldn't!

Frozen blueberries work great…i use them all of the time.  when they come off the bush, i freexe them i quart bags in 2 cups in each and take them out according to how many i want.  Delicious.  I'm going to try your pie, it sounds super!
