hello everyone,
I've been asked to find a real Kiwi dessert and from all the women
the same reply The Pavlova!
I have been to three gatherings here now and each at one the pavlova was a winner.
Grace, the lovely woman who runs the corner shop gave me this recipe and I pass on to you.
It's a bit scrummy!!

The Great New Zealand Pavlova

INGREDIENTS:-

4 EGG WHITES
1 & A QUARTER CUPS OF CASTOR SUGAR
HALF A TEASPOON OF VANILLA ESSENCE
3 QUARTERS OF A TEASPOON OF WHITE VINEGAR

method:-

Beat the egg whites until soft,
Add one third cup of sugar and beat,
gradually add remaining sugar, beating well.
When all the sugar has dissolved (about 8-10 minutes with a hand held electric beater) add vanilla & vinegar. Beat for 1 minute.
Line an oven tray with foil, draw an 18cm ( inch) circle and spoon in the mixture. Build up sides to 7cm ( inches) smooth top.
Bake at 150 degrees centigrade for 1 and a half hours. Turn off the heat and cool in the oven with the door open.

TO SERVE;-

Cover with fresh whipped cream and fresh summer fruits. traditional at xmas we use kiwifruits and strawberrie

Thanks Joanna for posting this.  My friend, Claire, also a NZder, had sent me a Pavlova recipe in my Christmas card, but I've left it at work.  Now I can try this while I'm home.  The Christmas card had a little bird eating Pavlova on it.

Thanks for the recipe! I've taken the liberty of translating some of the treminology into its US English equivalent:

Scrummy = Delicious!

Castor Sugar = white sugar (as opposed to brown sugar)

Vanilla essence = vanilla extract

150 degrees centigrade = 300 degrees Fahrenheit

I have to admit…..I was wondering what castor sugar was and whether or not I could find it in our stores here! HA! I thought maybe scrummy meant yummy or something like it. Smile We will learn a lot from you Joanna…I think it's cool that we all come from different places.

Hi all

Happy New Year!

Hope you had a chance to try out the pavlova. I'm not sure where to start here there are so many many beautiful recipes, but I've always wanted to bake my own bread and the pumpernickel sounds scrummy. There's a Mexican Chicken Cassorole that I'd like to have a crack at too. I'll get back to you.

I've been looking for a recipe for Pavlova. We had it when we lived in South Africa. But in South Africa when we used castor sugar it was a super-fine graded sugar….not like our regular sugar. Thanks for posting it.
