Mine is usually a combination of whatever I have on hand.  The one thing we do like is cabbage…it makes the soup for us…but you can leave it out if you don't care for it.  I add meat (usually ground beef).  If you don't want it, leave it out!

Vegetable Soup

3 or 4 cups cooked cubed beef and broth,

   or 1 1/2 to 2 pounds hamburger, browned

   and drained

4 medium potatoes, cubed

3 medium carrots, sliced

1 chopped onion

1/2 cup chopped celery (include some leaves)

1/4 cup chopped green pepper (I leave this out)

2 cups peas or green beans or lima beans (or all)

Add some corn

2 cups shredded cabbage  (I like it a bit crunchy,

   so I add this towards the end…to the top…letting it

   steam)

Combine in large saucepan, and cook until tender, 25 to 30 minutes.  I dice smaller – mine cooks a bit faster.  I don't like mushy veggies.

1/2 cup rice or macaroni (if you want it)

Cook separately until tender, then add.

1 cup canned tomatoes or juice

1 1/2 teaspoon salt

1 tablespoon sugar

2 teaspoons Worcestershire sauce

1 teaspoon chili powder

1/4 teaspoon thyme

1/2 teaspoon each salt and pepper  (taste it before you add it)

Add, and heat to boiling again.

3 tablespoons cornstarch

1/2 cup water

Dissolve and add, stirring until thickened.

Makes 10 to 12 servings.
