I make this one more often…it never tastes the same twice.  Throw in whatever veggies you like…

Vegetable Soup 2

1 – 1 1/2 pounds lean ground beef, browned and drained

28 ounces beef broth

3 carrots, sliced

3 stalks celery (include leaves), chopped

28 ounce can petite diced tomatoes

2 potatoes, cubed

1 small head cabbage, shredded (I add this last to the top and steam it)

1 medium onion, chopped

Combine in large saucepan and heat to boiling.  Simmer 25 to 30 minutes until tender, stirring occasionally.

Add seasoning as desired.  Salt, chili powder, oregano, a little thyme.  I add 1/4 teaspoon thyme, and 1/2 teaspoon each of salt and pepper…maybe I'll throw in a little chili powder…taste as you go.  I don't add oregano…but if you like it, add it…slowly and carefully…until you get the right combination of flavors.

Add to above as it's cooking…stir well.
