Vidalia Dip
2 cups finely chopped Vidalia onions
2 cups shredded white cheddar cheese
2 cups mayonnaise
1 – 8 ounce package cream cheese
Dash of white pepper and a dash of salt
Bake at 400 degrees for approximately 30 minutes until bubbly brown. Serve with crudités/crackers/chips.

This sounds delicious, does it work with other onions? We don't get good vidalias until spring

I think it would work with a Texas Sweet or a Walla Walla (my favorite, by the way…). I'd just try to find a sweet onion instead of a yellow or white one…I think they'd be a little strong.

My MIL makes a version of this that sounds gross but when you make it they are gone before you get them to the table. Take equal parts finely chopped onion, mayonnaise, and grated parmesan cheese. ( 1 use 1 cup each) Mix together and spread on English muffins. Broil until hot, brown, and bubbly. Cut with pizza cutter into wedges. Hurry up and eat a couple or you won't get any.
Makes a great super bowl dish. Be careful not to burn them. Stand right by the oven.

I made this tonight and put it on a fresh baguette and grilled it. Dh and I ate the whole thing and were fighting over who got the last piece, then I went and harrassed the kids for the little pieces I gave them. Then! I spread it over nacho chips and microwaved it for a minute and had that for a midnight snack.
I have a tiny bit left that I was considering taking to my sisters tomorrow, but no I think I will just pick up some more mayo and a couple more baguettes on my way home, and not even mention it to her.
