made this tonight substituting as noted below…. the only thing I would do differently next time would be to mix some of the cheese into the mixture before adding it to the crust (which i was supposed to do but missed it bouncing back & forth from the pc to the stove & otherwise multitasking!)

no exact measurements here

 

one blind baked pie crust (called for "rich pastry") I had a tube of cresent rolls in the fridge which I used to line the pie plate & pinched together the edges & blind baked

 

cubed potatoes fried in olive oil til golden brown

Onions sauteed until golden (I only had shallots – so i used those & put them in with the potatoes when they were about half done – they caramelized very nicely)

2 cloves garlic – added about 3 minutes after the shallots

add salt pepper & whatever herbs (Parsley, basil, chives) and or seasonings (whatever you use for hashbrowns/ homefries is good)

when everything is nicely browned and crispy remove from pan and drain on paper towel.

dice up some bacon (was supposed to be pancetta) & fry until nicely crispy – remove and drain

 

mix everything together (i would add some shredded cheese here) and put into pie crust

top with more shredded cheese & bake until cheese gets all nice & melted into the nooks & crannies….

Would blind baking the crust be what you would do for a cream pie?

This sounds very good!  A new use for those leftover boiled potatoes in the fridge! Yes

HAH!  Sounds wonderful, but I'd probably have to add a pint of the Oliverio's Peppers in Sauce Olvero, or my homemade version of them!

That does sound really good!  The best recipes come from putting together whatever you have and seeing what comes out of it!

Question for Pete:  Please educate this Rocky Mountain girl.  What are the Oliverio peppers?  There are so many products in your area which either are not available in Colorado or have a different name.  Love peppers and like trying something new.  Thanks Pete.

Yes, Oliverio's is a local (to Clarksburg, WV) company that you can explore here: http://oliveriopeppers.us/  They feature a couple of Suzanne's recipes on their front page!

Last summer we had a home canned version submitted by our resident canning guru Dede that is delicious.  You can find it here: http://suzannemcminn.com/forum…..-recipe-1/

Also, there are some other brands around the country which are very similar, and Oliverios ships their products.

Thank you, thank you, thank you.  This sounds fantastic!  Peppers, tomatoes, etc.  What could possibly be bad with that.  Come summer and the peppers are producing this will be at the top of the list.  You all are great.i  So glad that I stumbled across CITR while looking for burnt sugar cake.

yes, pre bake with pie weights (or dry beans)

 

Pete – think the peppers would work well

 

thinking minced up brisket/pot roast, with the fried potatoes & a little gravy & maybe some peas would be good too….
