Oh littlebird, I feel your pain!  A few months ago, I burned out the ignitor on our oven (wore the poor thing out!).  It was agony for that long weekend before a repairman could come out!  Hope you don't have to wait too much longer…….

I have been experimenting with recipes trying to come up with a tasty breakfast bar or cookie that is very portable, has enough calories to satisfy my hubster, and is cheap and healthy to make. It has been a lot of fun. I have finally perfected a recipe that passes all his criteria, especially the taste criteria. Each bar has about 317 calories and costs about 25 cents to make. He is pleased, and I had fun. Can't beat that!

Thawed and simmered my elderberries from last falls picking. Sunday will be making either elderberry jam or jelly. Looking for a recipe without seed, all my canning books leave the seed in, thinking will run through a sieve then go from there. Anyone make seedless elderberry preserves of any kind? .. snuggle

I steamed juiced my elderberries…no seeds. Before my steam juicer I used a Foley food mill and made seedless jam.

We like Elderberry/Apple Jelly…tastes a lot like blackberry.

I just use the recipe for elderberry cooked jelly from the Ball pectin instruction sheet.

If I want to mix with apple i just use a cup or two of apple juice in place of one or two cups of elderberry.

My boyfriend and his family are big into canning and preserving and I have never actively done it myself but I am looking forward to it after seeing the cherries, peaches, pears, pomegranates, figs, nectarines that are forming on their orchard's trees!

 

Today I am going to plant two baby american chestnut trees in pots that are destined to become giant pasture ornaments after much TLC. It was 34 here in NC last night, burrr! My herbs and tomatoes look ok and they were outside. Going to be potting up some globe basil, lemon verbena, chocolate mint and spearmint because we all know what mint does!

 

Then perhaps to the tractor shed to continue cleaning it out to where we can put the tractor back in there once we get it back from annual maintenance.

 

Although right now I am drinking herbal tea and eating a thick slice of cinnamon raisin bread and contemplating the cool temps outside!!

butterfly Today is going to be a beautiful day here. I have bread going into the oven shortly, and then going outside to work in the garden. I have 2 climbing roses to plant and other flowers to transplant. I cant wait to get out and play in the dirt!

Today my daughter and I are celebrating her 21st birthday by my teaching her to make bread (she finally wants to learn), making falafel (a first for both of us), vegan pumpkin cookies, blueberry bars and a vegetarian lasagne for her birthday dinner tonight.

I'm so pleased she is wanting me to pass on some of my skills to her!

Went to a 3-year old's birthday party.  Little Molly is so adorable and such a good little girl.  Her parents had a small petting zoo and I immediately fell in love with two baby goats.  I was holding one for quite a while and it fell asleep in my arms with it's little head snug under my chin.  Wish I lived in the country so I can have chicks and goats!!

Crafting projects! Revitalizing stuff I've picked up at thrift stores and estate sales. An old frame, some TV tables, a vintage bookshelf and a silverplate tray (it will be a chalkboard). Finished a glass tile mosaic frame and also working on a portrait carved in clay project for Mother's Day. whew. Family is gone for the weekend and I've been making the most of it.

I (sorta) have a farm in Africa.

happy-flowerI am doing as little as possible today. Have really been pushing it in yard work the last few days, so a day of doing very little is iin store. Just sit in th swing and enjoy the fruits of my labor--before I need to do it all over again!!

Sorry BuckeyeGirl, I needed to tweak the breakfast bar recipe a bit. It had a fatal flaw in it, we discovered. It  did not travel well after being thawed. It crumbled. Turned to granola. I will post the recipe next, as the flaw has been remedied.

What a glorious day!  I spent just about the whole day outside in the sunshine raking the garden which had been rototilled, pulled weeds, pruned and then took a couple of breaks and sat in the gazebo with a cold Pepsi.  Tomorrow I plan on hitting a couple of the local greenhouses to buy vegs. plants and plant to my heart's content.  Can it get any better than that?!  I love this time of year!!

Victorian girl, It gets a lot better than that. Today we launched our boat for the summer, I worked a couple of hours for pay, I collected some maple wood for future bacon smoking, Watered the garden, and broiled a piece of lamb for supper.

I'm hitting a few garage sales, baking a cake for Sunday dinner, dehydrating some peppers, getting some groceries, planting some flowers, doing laundry, and anything else I can think of to keep from cleaning and organizing my craft room. I'm just like a little kid…I need someone to stand over me and keep me on taskwhip.

This morning we put the awning out on our camper, took out the new grill, put it together and put it on the back deck, got out the camping chairs and sat out under the awning while chasing away 4 wasps that were trying to get us! Can't wait to go camping! We go to the mountains every summer for a couple months. Only going for 4 weeks this year.

Will be grilling a steak tomorrow night! Yum!

I also planted 3 geraniums in my flower garden. Never planted them in the ground before, hope they do OK.

Remember, if it rains on your picnic it's also raining on your garden!

I am having a great day. Early this morning I went swimming for an hour doing 20 laps and other exercises then went into my water exercise class for another hour. Then home to do a large laundry which is almost done. Now I am cooking dinner which is orange/vanilla sweet potatoes, Brussels sprouts and chicken tenders.
